Just had lunch, but what a lunch. We went shopping yesterday and the salmon in the seafood case just whispered some sweet nothing in my ear.

Salmon a la Marcus:
1 small onion, lightly chopped
2 tbsp butter
6-7 mushrooms, chopped
1 tbsp lemon juice
Salt & pepper
ground cumin
red (cayenne) pepper

Saute over med-high heat in large pan until onions are transluscent.

1 salmon fillet
Put in butter, between sauteed ingredients, skin-side down. Immediately add:

6 green olives, chopped
6 black olives, chopped
1 small tomato, chopped and seeded
2 cloves garlic, rougly chopped

Throw over and around salmon. Reduce heat to low/medium-low. Cover with lid. Cook until salmon is just about cooked all the way through (I like my salmon a little medium). Don't peek too often, or steam won't cook the top of the salmon!

Ahhhhhhhhhhhhhhhhhhhhhhh

Got a gift card from Media Play for Christmas and decided to spend it as I don't have any reading material around. Here's what I bought:

Gray's Anatomy -- I've been looking for a good deal on this. Free is a pretty good deal.
Pagan Babies -- The latest Elmore Leonard novel. He's one of my favorites...his simple grasp of dialogue makes me envious.
The Legend of Bagger Vance (Pressfield)-- I haven't seen the movie yet and I like to read the book before the movie.
Left Behind (LaHaye & Jenkins) -- I'm probably the only one in the Deep South that hasn't read this yet. Not being very religious, I hear it's good science fiction/fantasy. I have my reservations, but hey, it's free!

Now, on to cook dinner.
